16 oz. Gemelli Pasta
2 Cups Basil Pesto, homemade is best (see our recipe)!
4-5 Tomatoes, diced
1 Can, 15.5 oz. Cannellini Beans
1 Red Onion, diced
12 oz. Feta Cheese
Prepare gemelli according to package directions, drain well and let cool slightly. In large mixing bowl, toss pasta with pesto, coating well. Gently fold in tomatoes, cannellini beans, red onion and feta cheese. Can be served right away but best if chilled for at least a couple hours before serving.
