2 Medium Cucumbers, chopped
1 Red Bell Pepper, chopped
1 Yellow Bell Pepper, chopped
1 Red Onion, chopped
1 Can (15.5 oz.) Cannellini Beans, drained and rinsed
3/4 Cup Olive & Thistle L'Italiano Extra Virgin Olive Oil
1/2 Cup Olive & Thistle Champagne Balsamic Vinegar
1 1/2 tsp. Olive & Thistle Garlic Powder
1 1/2 Tbsp. Olive & Thistle Herbes de Provence Seasoning
Salt & Pepper to taste
Combine all chopped veggies and rinsed beans in a mixing bowl. Add O&T L'Italiano EVOO, O&T Champagne Balsamic Vinegar, O&T Garlic Powder, O&T Herbes de Provence, and Salt and Pepper to taste.
Combine well, can be eaten right away or refrigerated and served later.
