Ingredients:

4 boneless, skinless chicken breasts
1/4 cup chipotle-infused extra virgin olive oil
1/4 cup apple cider vinegar
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
Salt and pepper, to taste
For the Chipotle Vinegar Glaze:

1/4 cup apple cider vinegar
1-2 chipotle peppers in adobo sauce
2 tablespoons honey or brown sugar
Salt to taste
Instructions:

In a bowl, whisk together the chipotle-infused extra virgin olive oil, apple cider vinegar, minced garlic, ground cumin, smoked paprika, salt, and pepper. This will create a flavorful marinade.

Place the chicken breasts in a zip-top bag or a shallow dish and pour the chipotle olive oil marinade over them. Ensure that the chicken is well-coated. Seal the bag or cover the dish and refrigerate for at least 1 hour, or up to 4 hours, to allow the flavors to infuse.

While the chicken is marinating, prepare the chipotle vinegar glaze. Blend together the apple cider vinegar, chipotle peppers, honey or brown sugar, and a pinch of salt until smooth. Taste and adjust the sweetness and spiciness according to your preference.
