Ingredients
- 1/2 cup fresh or frozen blueberries
- 1/4 cup O&T Blueberry Balsamic Vinegar
- 1/4 cup O&T Extra Virgin Olive Oil
- 2 tablespoons honey
- 1 small shallot, finely minced
- 1 teaspoon Dijon mustard
- Salt and black pepper to taste
Prepare the blueberries
Prepare the Blueberries: If using fresh blueberries, rinse and drain them. If using frozen blueberries, let them thaw slightly.
Blend the Blueberries: In a blender or food processor, combine the blueberries, blueberry balsamic vinegar, honey, minced shallot, and Dijon mustard. Blend until the mixture is smooth and well combined.
Make the dressing
With the blender or food processor running, slowly drizzle in the extra virgin olive oil until the dressing emulsifies and becomes thick and creamy. Taste the dressing and season with a pinch of salt and black pepper. Adjust the sweetness by adding more honey if desired.
Strain (Optional): If you prefer a smoother dressing without blueberry skin and seeds, you can strain the dressing through a fine-mesh sieve into a bowl.
Drizzle the Blueberry Vinaigrette over your favorite salad greens, such as mixed greens, spinach, or arugula. You can also add toppings like fresh blueberries, sliced almonds, feta cheese, and red onion for a delicious and colorful salad.
Toss the salad gently to coat it with the dressing and serve immediately. The sweet and tangy flavors of the blueberries and blueberry balsamic vinegar will complement your salad beautifully.
This Blueberry Balsamic Vinaigrette Dressing is a delightful addition to salads, bringing a burst of fruity flavor with the unique twist of blueberry balsamic vinegar.
